Fall weather in Georgia isn’t quite the same as it was up north! As much as I love the fact we can still be wearing short sleeve shorts, I miss the fall leaves changing! Lately we’ve been going to the nearby park, and she is loving exploring! Bella is a walking, talking charmer who makes friends everywhere she goes! I think I’ll keep taking advantage of the georgia gall weather while I can!

Sifting your whole wheat flour can help the bread rise better. I am notorious for trying to make recipes extra healthy, and a lot of times those don’t work out. Once I started sifting my whole wheat flour, my breads & baked goods started to rise again! For a whole explanation of why this process helps, read more here.

Ingredients:
  • 2 1/2 cups whole wheat flour, sifted
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 Tbs pumpkin pie spice (or make your own like I did below)
  • 1/4 tsp salt
  • 1/3 cup honey or pure maple syrup + 1 Tbs
  • 1/2 cup olive oil or melted coconut oil
  • 1 cup canned pumpkin
  • 1 large egg
  • 1 tsp vanilla extract
Glaze ingredients
  • 1/2 cup powdered sugar
  • 2 tsp pumpkin pie spice
  • 2 Tbs milk (I used almond milk)
Pumpkin Pie Spice Mix
  • 2 Tbs ground cinnamon
  • 1/2 tsp all spice
  • 1/2 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger

Instructions
  • Mix wet ingredients in one bowl: pumpkin, egg, honey, oil, vanilla. 
  • Combine dry ingredients in another bowl and mix well: flour, baking powder, baking soda, spices and salt. 
  • Combine both ingredients and mix well. 
  • Spoon small cookies onto greased cookie sheet. This recipe makes approximately 30 cookies. 
  • Bake at 350 for 12 minutes.
  • While cooking, mix your glaze with a whisk. Once you remove munchkins from the over, lightly coat the treats with the glaze. 
  • The glaze is optional, but just that little bit of glaze makes the cookies extra delicious! 
  • Let cool. Enjoy!
